Golden Dragon Pork Sui Mai
A bit of a faff to cook – no microwave option, and assumes you know how to steam things. I don’t.
Still, I improvised, and the dumplings looked amazing being slowly sweated to a warm temperature.
I left it for more than the instructions said, but still found my first mouthful quite cold so had to put back on the boil.
I provided soy sauce, which helped give the dumplings a bit of savoury umami.
The dumplings aren’t too heavy on the pastry, nor are they too fatty in the meat. They’re a little bit ‘solid’ but taste nice and authentic.
Perfectly good as a starter for the one you’re trying to impress. Too impractical as party food. Too weird as a main.
